Coffee Toffee Chocolate Cake



This is the cake I made for my husband's 39th birthday. He was born on Halloween, so I like to incorporate candy in his cake whenever possible. Heath bars are one of his faves! We weren't sure if the kids would like it with the coffee flavor, but they loved it! Our daughter said it smelled like Starbucks! What could be wrong with that?!






Coffee Toffee Chocolate Cake
Bake your favorite chocolate cake recipe in two 9" rounds. Allow to cool completely.
Frosting:
6 oz semisweet chocolate
2 sticks of butter
1 large egg yolk
1 t. vanilla extract
3 c. sifted powdered sugar
1 T. instant coffee powder
1 1/2 T. hot water

Place chocolate pieces in heat-proof bowl over simmering water on stove to melt. Cool to room temperature. Mix room temperature butter for about 3 minutes until light and fluffy. Add egg yolk and vanilla and mix another 3 minutes. Gradually add sugar until incorporated. Dissolve instant coffee in hot water and add, along with melted chocolate until blended.

Place frosting between the 2 9" cakes, and spread evenly over the top and sides of the cake. Add chopped up Heath bars to the top of the cake. (It's easier to break up the bars if they are frozen first.) Enjoy!
